Easy Chickpea Falafels


1 can chickpeas
1 egg
½ cup parsley, chopped (if you have basic use half and half)
¼ cup onion, chopped
1 clove garlic, chopped
2 tbsp flour (or panko crumbs if you are GF)
2 tbsp canola oil
1 tsp cumin (or curry powder)
½ tsp salt
½ tsp pepper
Juice of ¼ lemon


Drain and rise chickpeas
Combine chickpeas, egg, parsley, onion, garlic, flour, lemon juice, and salt & pepper in a food processor and blend until mixed
TIP: Do not over-mix! You want a course, rather than a creamy texture. It should not resemble hummus!
Form into patties about the size of your pinky (recipe should yield ~6 patties)
Heat oil in a non-stick pan over medium heat
Pan fry patties about 5-8 minutes per side, or until golden brown
Serve on salad or enjoy with some tzatziki sauce or hummus!
