Mediterranean Quinoa Salad


1 cup cooked quinoa
½ cup tomatoes, diced
½ cup cucumbers, diced
½ cup red pepper, diced
¼ cup chopped fresh parsley
2 tbsp olive oil
Salt & pepper


Stir tomatoes, cucumbers, red pepper, parsley, and olive oil into quinoa Season with salt and pepper to taste Serve as is or with pita chips or in a pita wrap
